honey library

Not so long ago we were told that we could not be sure that the honey we bought was actually pure honey.  A good deal of honey was adulterated with sugar to make it go further.  Also, the label might say where the honey came from but could we be sure that all the honey in the jar was produced in that location?

The answer to this anxiety is the honey library.  Samples of honey produced in Australia are being collected and stored, and their characteristics and place of origin recorded in a database.  This is the first such collection in Australia. If there is any doubt about a particular honey, it can be matched against the sample to determine its level of purity and its point of origin.
